In my experience it was people with more money than they knew what do with
And not enough time to do anything fun with it. Never knew more wine collectors than when I was working at a big law firm where everyone was earning $250k plus at the very low end but working 60-80 hours a week. It was just a status symbol to have a nice wine collection. I'm actually someone who enjoys wine, but I think there's great stuff in the $10-20 per bottle range.

Probably the same reason people devote entire media rooms to the San Francisco 49ers, or Lego sets, or Marvel Avengers.
