Make things easy. Quarter the turkey. Season with S/P and fresh herbs. Roast at
375 until breasts are 150 and leg/thigh are 205( for fall off the bone dark meat, otherwise 180 for more texture in the dark meat). Roasting should take not more than an hour 15 for a 14-16 lb turkey. Simple.
