Agree on brine. Wegmans or Kinder brines work great
Just follow the instructions. I’ve smoked and done regular oven bag methods of cooking and both work great after a brine

Anyone have a turkey recipe and/or process they swear by? Will be smoking it.

My wife does Alton Brown's recipe. It's great.

If you brine, just know you can't use the drippings to make gravy. Brines will soak into juices & make it way too salty

I do it all the time. Gravy is supposed to be salty.

Certainly going to depend on the brine. Just a warning.

I always end up adding bullion to my gravy from regular drippings. Brining it should be fine unless your brine is
