You just have to decide if being all in the same ecosystem of cameras is the most important thing. There will be limitations but some benefits in doing so.

Not an IT person - EUFY. If you have a pretty good understanding of IT and networking - Unifi.

Eufy IMO. For the detached garage, I suggest a Reolink camera because it gives about a 180 degree view

Yes, using a third party. I have different brands on HomeKit.

5e is fine. It can handle 1000 mb a second. 4K video needs 15.
