Mine produces a lot of direct heat. Insulated blanket helps a little.
The bottom side of my bug meats obviously get a lot of direct heat.

I can add a pan to deflect some of it and I use fire blanket to reduce heat loss and therefore amount of direct heat that needs be generated.

I'm left wondering why the pellet burner is right in the middle. Maybe it's best for efficiency? But it means some of your food is getting much more direct, radiant heat than smoking methods should.
