180 - age = the upper limit of zone 2. Subtract 5 if you’re out of shape.
Add 5 if you’re in shape.
This is from Training for the Uphill Athlete.
Method is from Dr Phil Maffatone who is the godfather of Zone 2 training.

What’s the reasoning behind Age being a factor in the optimal fat burning zone….

I've heard 220-age but have never multiplied by .66. That results in absurdly low rates.

220 - age = Max HR. This is upper limit of Zone 5 training. Fat burn is Zone 2.
