If you are willing to forgo a whole bird then Texas style turkey breast is killer for Thanksgiving, I've done it for
several years in a row now. You can use any type of smoker.

Jennie O frozen boneless skinless turkey breast, Walmart. Butterball has similar boneless skinless breasts available.

I've done those before, but they are a poor substitute for a big texas-style breast (glued).

Costco had them too. I found bone-in at a Walmart which is what I wanted for smoking.
