Edwards did his coaching in coaches meetings.
But even then, it was mostly grand vision and culture type stuff. That’s not to say that he didn’t do anything besides hire coaches.
If you read Tom Holmoe’s story about his (non-LDS) parents coming to see him freshman year while he was struggling a bit, you get an appreciation for the genius of Edwards. After spending some time with Edwards one on one in his office, Holmoe Sr. told Tom “That’s your coach.” in other words, make it work. You’re staying here and playing for this man.
