Hard stop at 160. Do not take them to 160. 150 is all that is needed and makes
Chicken breast a lot better. Pull at 150. There will be a few degree carry over and it’s perfect.

Don't. They dry out too quick and don't take on much smoke anyway.

Bone-in chicken thighs are WAY better on the smoker.

Change to thighs. Leave the skin on. Cook above 325. Brush with a marinade while cooking.

Drop the smoker. Sous Vide instead. Put a couple of lemon slices in the bag - best chicken breasts ever

Best smoked chicken is a whole chicken on a can of soda (others use beer). Turns out great & moist

cook with the sous vide. If you want smoke, add liquid smoke. Perfectly cooked.
