Made marinade at 2200 the night before and let them marinate.
1440 - on at 225° w/ SS on lowest rack, not directly on grill grates, generously salted them.
1540 - 111°
1600 - 127°
1610 - 135°; turned up to 425° to sear
1620 - 145° done! Pulled and rested 5 minutes. Sliced, kosher salted, served!
