I’m not a fan of the Mexican version at all.
We make the Guatemalan version every year and give them to friends, neighbors, coworkers, etc. We always have people ask to buy a bunch more and offer around $2.50 - $3.00 each.
We make around 200 every year around Christmas. We are a little more liberal with the pork, olives, red pepper and recado so the ratios are much better. The masa isn’t made from corn either, it’s made from rice. I like it a lot more than th corn. Then it’s steamed in banana leaf.
Top with a little cholula…delicious.
