You can, they have cool little luggage storage lockers for this purpose and the subway goes right to the terminal.
That said, I’m familiar with how the subways work and getting around but even 20 years after my mission there was a learning curve.
Find some YouTube vids on how to do it and get the public transportation app on your phone. If it looks like something you can do, then there are tons of awesome places to burn a few hours in Seoul.
