That is something to keep in mind.
While 165 is hot enough to kill bacteria instantly, it takes 5 minutes to kill it at 150, and 2 to kill it at 155.

Pull it at 150 and it will keep cooking. Takes a long time for it to cool down.

The turkey is cooking even when you pull it from the oven, and most people overcook them thinking they need to get it to 165, but you don't.
