The wind was creating havoc for me yesterday, same thing as you
I ended up turning on another burner and the back of the grill ended up being hotter so I moved them all to the back
Must have been the direction of the wind and turned up heat to med high and turned out great but cooked way longer than usual

What temp did you start your meat at? Should be room temp and not straight out of the fridge.

It was room temp. I think the wind issue may have played into it. Steaks in the back cooked faster.
