Simple statistics. It increases variance.
Yes, you have many more negative plays for the offense when you blitz. But when you blitz and don't get home you have fewer defenders and leave yourself open to big plays.

If you are the better team, why would you want to increase variance? If you can pressure the quarterback without blitzing, doesn't it make sense to leave guys home in coverage? This was Lamb and Tuiaki's basic theory, but the problem was we weren't the better team. We needed those havoc plays to create turnovers.

What Hill is doing incredibly well is disguising where the blitz is coming from so that we get home consistently.
