a good crispy sweet potato fry (hard to do though) and I like mixed sweet potatoes in a medley diced fairly small and heavenly seasoned, but I feel the new trend to put sweet potatoes in everything is a bad one and it overpowers dishes and just tastes too sweet and gummy.
