That's part of his story - part of the good and part of the bad.
He tries to make big plays and doesn't give up on them easily. Sometimes that means that he holds onto the ball too long. And when he does that - he might get sacked. Or he might be getting hit as he's trying to throw it or throw it away and end up with an interception. Or he may wait just long enough for someone to come open and he ends up making a big play.

If he made quicker decisions, that would mean either throwing it sooner - including throwing it away. Or tucking it and running sooner. And that may result in fewer bad plays, but probably results in fewer big plays too.

What everyone wants is the guy who holds onto it too long and then makes a big play, but knows when holding onto it too long is going to result in getting sacked or hit and throwing a bad pass. Unfortunately, QB's don't come with a seer stone to know how every play will turn out.

Some of the best QBs do tend to have a 6th sense that lets them know when to hold it and when to throw it away. But that's not normal.

The funny thing about your comment is that Jake threw an int earlier this season because he was trying to throw it away as he was hit, and the ball went to the wrong guy. So now he's getting hit and keeps the ball, resulting in a sack, and the frustration is that he should've thrown it away.

Maybe he should've thrown it away - but if he's going to do that, he's got to do it earlier. Before being hit. I'd prefer the sack to the int, so I'm OK with him holding the ball and taking the sack instead of throwing it while being hit.
