You state you already have a mortgage. Then I'd say $100K is enough.
More than that will get you more of the wants and nicer vacations.
We live in Provo on just my income, and it's a lot less than the 200K some are suggesting is required, and we feel we are doing just great. We have 5 kids ... 3 at home now. The key is the mortgage, but your post said you had a reasonable one already.
