You're attacking the wrong logic.
I didn't say coaches aren't infallible. I just said that they knew more about football than your average CB poster.

So - first of all, your example is pretty poor when it comes to following up to your original post in this thread. In that original post, you're talking specifically about picking a starting QB. So let's go with that and apply your piano player analogy.

Yes - sitting in the congregation you and I probably can tell that a piano player is messing up the song. But do we know why? Most of us probably don't.

If a talented musician sits down and has the four people who are potential options to play the piano for Sacrament Meeting sit down and play a dozen hymns, scrutinizing how they do, where they make mistakes, etc. - there's a good chance they'll be able to tell who will make the least mistakes and make the most hymns sound the least bad week to week.

So sure - we can sit back and say "gee - the person they picked to play isn't all that great. Give the other person a shot." And if they do give that other person a shot, they may actually play one of the songs pretty well. But that doesn't mean they'll play all of the songs well. And there may be things within their capacity that makes it so that they'll NEVER play certain songs well.

Moving back to football - there may be a QB that does some plays better than another. But we need a QB who knows the whole playbook - not just a few plays - the best. And if the coaches have been watching them practice the full playbook - they're going to have a better idea of who that is than those of us who haven't.

So - again - I know coaches are fallible. I just think they have more knowledge and experience than most fans on a message board.

And if the question isn't about picking a QB, but is about whether or not the coach is any good - well, I addressed that too. I suspect the AD has more experience when it comes to picking coaches, as well as having a MUCH better idea of who actually may be available, than 99% if CB. So if it's a coach that needs to be picked, I'm going to lean on them to do it. Not that the AD is infallible - but because he knows more than your average CB poster.
