has never once suggested Rudy's. He is a Dallas Native but attended UT and resided in Austin for 30+ years.
I will be honest I have only tried Rudy's in Plano/North Dallas The brisket was unremarkable and turkey was awful (I know not bbq staple but when it is done right is is amazing, Meyers in Elgin) Links were not bad but not memorable. And it is a chain....
Not going to waste my time for a "controlled corporate" bbq over an opportunity to try a new or different pitmaster. My guess (because I have never returned to try Rudy's again after my experience Dallas) is The Salt Lick in Bergstrom airport is better than any Rudy's & they can't smoke onsite...
The 2 on my list this trip are Interstellar & Helberg's
