Need some pork butt smoking help. I'm doing it for the first time, and put it in
the smoker this morning at 8:30 AM. It's only 3 pounds, and I've been cooking it at 225 all day (for 10 hours so far). I think I hit the stall at about 2:30 PM (6 hours in), and it has slowly climbed since then for a few hours to 165...but now it's been at 165 for the last hour.

So far I haven't wrapped it, because I was hoping to keep going without so I could get a better bark...but at the same time I do want to eat it at some point tonight. I did bump it up to 250, but at this rate I'm afraid it's going to finish in the middle of the night.

I don't know what I'm doing...any advice? Once it starts rising in temp again, will it go pretty fast, or is it going to be a long steady climb that will take a long time?
