IMO, a "must do" is the nighttime manta-ray dive near Kona
There is nothing else like it anywhere. You can do it as a scuba diver (better, IMO), or you can do it from the surface holding on to a type of boogie board. Scuba divers will sit on the ocean floor (about 20 feet down) around the "campfire", which is a large group of flashlight beams shining up. This attracts the plankton and the manta-rays. Normally there will be 5-10 huge manta-rays slowly swimming within 2-10 feet of you, gliding by or doing slow somersaults in front of you. The snorkel people are directly above looking down. I have known multiple people who have done both the scuba and snorkel experience, and some liked the snorkel even more.
