IMO, the big problem with sports video games is two-pronged.
First, it's very difficult to strike the right balance of difficulty and realism that will appeal to the broadest possible segment of fans.

Second, individual player qualities are very difficult to recreate in a simulation. The standard attribute rating scales that games use are only a very rough approximation of how skills and abilities work in real life, and it's pretty rare that a game translates them into the mechanics in a way that "feels" accurate.
