At Texas Roadhouse? In my experience, the lower cost a steak is, the more overcooked it is likely to be, but it stays
pretty consistent within any given chain. Eg, Outback v Flemings v Steak 44

At a high-end restaurant I’ll even go as far as ordering something like a ribeye medium, because I want the fat to be rendered. But medium at Texas Roadhouse will be overcooked.

Fillet at a nicer place should be medium rare for me, but it’s almost impossible to get a fillet prepared that way at a TRH or Outback even if I order “rare”.
As long as they’re consistent, it’s kind of workable.

The worst is a steak at a place like Applebees. I’ve had them cooked only on one side! 🤷🏼‍♂️
