I've been to plenty of taco places where al pastor is an after thought.

Carne asada never is.

I've had to explain to others what al pastor is, never had to explain what carne asada is.

I don't think al pastor is even close to being the national Mexican dish, if it was the places that sell 1-2 types of tacos would sell them. But they don't, they opt for carne asada/chicken/beef.
