I have done the race twice and doing it again this year
I was also supposed to do Jordanelle and was bummed it was cancelled.

Overall East Canyon a great race. Its a point to point race so you'll have to prepare for that. You'll have to drop your bike off at East canyon resevoir either Friday night (recommended) or very early Saturday morning. Most people drop off their bike friday night and the will then park their car in Morgan saturday morning and take a shuttle van up. You could have someone drop you off at the resevoir early Saturday but they do close it off to spectator cars at some point. I live in Salt Lake so I drop my bike off friday night then actually sleep in my van somewhere on the side of the road in Morgan. Its actually pretty convient as I'm able to get on the shuttles right away. In the past they've had issues with people showing up at the last minute and there's a huge back up.

The swim starts off on a dock so thats fun. 1 loop swim for sprint, 2 for olympic.

The bike race starts with an out and back that goes east and then north towards big mountain. This part has some rolling hills and one bigger up hill on the way back.The second half of the bike race heading South towards Morgan is basically all down hill and fast with a few rolling hills. There is one switch back turn as you pass the resevoir that you have to be extra careful and slow on. I actually crashed on in last year and didnt finish the race.

The run is flatish with a few rolling hills mostly all on pavement.

Overall its a great race. Hopefully that's helpful. You'll just have to be sure to get your bike up to the top. Let me know if you have any other questions.
