For pasta, look for ones that are cut with bronze dies vs teflon coated. They'll
be a little pricier because the equipment wears out faster, but it leaves a rougher surface texture which sheds more starch into your pasta water. Use some of that water in your sauce when you go to coat your noodles and it will stick to them better.

edit: the rougher surface itself also helps with the sauce sticking, so it's a two-fer.
