I’ve flown through many airports myself, and I don’t think the walk through SLC is any worse than the two named above, especially if you land at the very end of the B gates at JFK. Heck, landing in Heathrow can be a massive walk as well depending on where you land. I think most people that fly out of SLC complain based on how easy it was prior to the new airport being built. The new airport, though, makes it much easier for larger planes which means more international flights into SLC. Eventually, this should help flight costs to come down or at least be comparable to places like LAX or SEA.
