It’s because the bananas used to design the flavor are extinct now
That’s what bananas used to taste like… a hundred years ago. They used to taste like banana laughs taffy but that species of banana went extinct.

Here you go:
“ The Gros Michel banana, also known as the Big Mike, was the primary banana grown in the United States until the 1950s. It was a popular export cultivar because its thick peel made it resistant to bruising during transport, and it grew in dense bunches that were easy to ship. The Gros Michel was also considered to be tastier than other bananas, and was likely the inspiration for artificial banana flavoring. However, a fungus called Fusarium oxysporum nearly wiped out the Gros Michel in the 1950s, and it's now extremely rare and difficult to find. The Cavendish banana, which is more resistant to the fungus, replaced the Gros Michel as the supermarket banana of choice. Because artificial banana flavor was developed based on the Gros Michel, some say that banana flavor in candy and other foods doesn't taste like the Cavendish bananas we eat today.”
