Normally adding salt to carbonated liquid creates more points from which the CO2 can escape which causes that
Fizz up you see with mentos albeit much more subdued. This will cause the liquid to go flat.

However the amount of salt in the peanuts is not sufficient to do this rapidly. So what you do get is a heightened bubble which gives you a crisper bite to each sip.

Technically the salt will flatten the soda, but due to the small amount of salt you'll have finished your drink long before that becomes an issue.
