425g Luke warm water
3.5g yeast
680g 00 flour
12.5g salt
Mix water and yeast let it sit while measuring flour and salt. Using a dough hook on a stand mixer, mix on setting 1 for 1 minute. Then 10 minutes on setting 2. Remove from mixer fold on oiled counter cover and raise for 30 minutes. Divide into 210g dough balls and rais about 6 hours before cooking.
