Here's a key lime chili recipe I really like
It was a marlboro national chili roundup winner in the early 2000's

 1 pound ground sirloin & 1 pound sweet Italian sausage casings removed or 1 pound ground pork
 2 large chopped onions
 1 cup chopped red, yellow, or orange sweet pepper
 2-3 chopped and seeded jalapeno peppers
 3 (14 ½ oz) cans undrained diced tomatoes
 4 (15 oz) cans drained and rinsed dark red kidney beans
 ½ cup beer
 3 ounces fresh squeezed lime juice + 1-2 tsp shredded lime peel or lime zest
 2 teaspoons Cholula Sauce or other hot sauce of your choice
 2 cloves garlic, crushed
 3 ½ tablespoons ground cumin
 1 ½ tablespoons chili powder
 2 tablespoons brown sugar
 2 teaspoons ground instant coffee
 ½ teaspoon cinnamon
 2 teaspoon pure cocoa powder or 1 oz. dark chocolate chopped
 ½ teaspoon black pepper
 ¼ teaspoon ground cayenne or chipotle pepper
 ¼ cup chopped fresh cilantro
 Tabasco Pepper white vinegar.
 ¼ cup thinly sliced green onions (2)
 1 lime cut into wedges
 Cilantro sprigs
Cheddar cheese





1. In a small bowl combine garlic, cumin, chili powder, brown sugar, coffee, cinnamon, cocoa powder, black pepper, and cayenne.

2. In a large pot or Dutch oven (4 quart or larger), cook ground sirloin & sausage, onion, and sweet pepper till meat is brown. Drain fat. Return to heat, add garlic mixture and stir until fragrant, about 1 minute.

3. Stir in the jalapeno peppers, un-drained tomatoes, rinsed kidney beans, beer, lime juice & peel, and hot sauce. Bring to boiling; reduce heat. Cover and slowly simmer for 30 minutes. Uncover and simmer 15 minutes more or to desired consistency, stirring occasionally.

4. Let cool for 5 minutes. Add chopped cilantro and Tabasco Pepper white vinegar to taste. Serve garnished with green onion, lime wedge, cilantro, and cheddar cheese if desired. Also very good served over spaghetti.

Makes 8+ servings.

Note: Chili will seem very thick in step 3. Do not be tempted to add additional liquid at this point as it will thin considerably during cooking. Chili can be thinned after cooking by adding beer or water if required.
