The only time period they can really explore is after ROTS and ANH. Which Kenobi did. Unfortunately for the mainstream Star Wars universe, there aren't any notably adversaries for him in that time period. Plus he has total plot armor because the character can't die before ANH.

That was one of the major problems with the Kenobi series. We knew everybody was going to make it out of the series just fine.
