I cooked these on my Yoder pellet smoker instead of the oven, but they were the best ribs I've made yet.
I used a single rack of spare ribs (I prefer baby back usually). I coated them with a little bit of olive oil and the rub around 8 in the morning. Then in the late afternoon I put them on the Yoder @250 for 3 hours. Took them off and wrapped them in foil after coating them with the sauce (I think you can probably get away with halving the sauce recipe even for making 3 racks). Put them on again for another 1.5 hours. Took them out of the foil and back on for another 20 min to set up the sauce a bit.
They turned out great. Rack was super floppy taking it off the smoker. The meat easily fell off the bone. I had Covid a few weeks ago and still can't taste very well, but still could tell they were great. My wife agreed it was the best I've made.
