But I do believe there is solid research and plenty of anecdotal evidence that more people than just celiacs are having issues with gluten. And it wouldn't surprise me if part of it is because we have bred wheat to be resistant to everything so now it is somewhat resistant to our digestion. I don't know that but it wouldn't surprise me.
