If you’re on a smoker at 375 you will get more than enough smoke for a turkey…
Think how a smoker, especially a pellet smoker maintains temp. It burns wood which produces more than enough smoke for a turkey

Not me, that's way too high. Turkey doesn't have much fat to render, so it doesn't need to be low and slow,
