Not me, that's way too high. Turkey doesn't have much fat to render, so it doesn't need to be low and slow,
but I think the end result is better right about 275.

How long do I smoke a 12 pound turkey if I spatchcock it? Planning 275 degrees

Depends upon several variable factors, usually about 12 minutes per pound. Don't smoke to time, though, smoke to temp

Just go at 375. Will take an hour maybe. No need to go any lower temp.

Ya you’ll get plenty of smoke flavor. Spatchcock makes the cook go faster. If

A lower temp will reduce the effect of uneven heating and overcooking or

What do you mean? You take it off at 140 and put it in a cooler? That sounds too

Why even smoke at that point? Might as well just put in the oven.

If you’re on a smoker at 375 you will get more than enough smoke for a turkey…

Go 425 for 30, baste, then 375 until 163-165 degrees

Agree except there is no reason to cook breast higher than 155. You just start
