I don't know rules, BUT, I think it is which PART of the body.
The Linemen can move hands and arms ... BUT NOT their torso, legs, feet etc.
There is also a time they all have to be set (I think like 1 second) before the snap.

Knee on the ground for holders is legal. If he had lifted his knee off the ground then put it back down the play is dead
