Yes, they dramatically changed a lot about the forging of the rings, including the order, and how people find out about
them, including the One Ring eventually, which hasn't even been forged yet in the show, as far as we know, and if it has, the Elves certainly don't know about it yet which, prior to the Siege of Eregion, the Elves did know about in the lore. The Elven rings were forged last in the books, and in secret, whereas in the show they were forged first, and right there in front of Sauron and he knows all about them.
As for the multiple storylines, that's why I felt the strongest episodes this season were the ones that only focused on 2, such as episode 5, which was just focused on Eregion (Celebrimbor/Annatar) and the dwarves. Also, that's why I thought the season finale was so weak, they DID stretch it too thin by cramming 2 episodes worth of story into one episode to just rush to the end of the season.
