Pro Athletes don't have a 4 year window and the vetting process is better than
college recruiting. So sure Brock Purdy is an example but that is a limited scenario. Every team will have 5+ Brock Purdy's every year that come of of nowhere and there are 120 teams that can bid for them. Look at Jack Kelly, Moa, Glasker, to name a few from BYU. Their values are substantially different now than they were 4 games ago.
