I’m a huge fan of long rest as well. I like cooking overnight. It’s usually done
about 10:00. I let it cool a little and then rest in the oven wrapped on warm (150-160) until ready to eat. Because of the long rest, I will often pull it earlier 195-200 if it’s tender and the long rest helps it render more without drying the flat. I also don’t stress if it will be done in time etc.
