noticed the trend I mentioned above. What I never see is mid-to-cheap chain restaurants serving steaks that are more rare than ordered with any consistency at all. The opposite in fact.

But I also suspect your wife’s definition of “medium rare” is very different than mine.

Any steak will cook while it rests. If you're doing it right you take the steak off when it's about 10 degrees below
