Sure. A steak should rest. It's part of the cooking process. If it doesn't rest it will be tough. It should rest whether
I eat it at the restaurant or whether I pick it up, or whether I cook a steak at home. Resting allows the steak fibers to loosen up, and the juices to soak in, so that your steak is more tender and juicy. If you do not let a steak rest, it will be tough and the juice will pour out of it when cutting it. A restaurant should factor this in when cooking steak.
