I mentioned that the NFL Draft rating make up in my initial post, but here are the rest of the rounds to give you an idea of who gets drafted (and their star rating)

Notice what percentage the "lowly" 3* players make up in the draft... nearly 50%. So the 5* guys are flashy and all, but NFL teams are made up of 3* players. And what's even crazier is that a solid 10% of NFL draft picks didnt even have a rating coming our of HS
