Did the same (rented a car and stayed in Bayeux) and we loved it. The drive was actually lovely, though train would be
faster. We picked up a private tour guide and drove around with him for a day in Normandy. It was Veterans Day so extra special.
Did a day Mont San Michel the next day.
Was absolutely worth it for us, but it was a second trip to Paris for us both. It’s true that you won’t have enough time for all of that and all of Paris.
That said, I like both of those more than what we would do on a third and 4th day in Paris.
