I don't think The Shining needs any more than it has already gotten - a movie, a miniseries, and a documentary. There's not a whole lot of benefit to going back and doing the movie with Jack and Wendy looking the way they're supposed to and the topiaries moving, IMO.

Salem's Lot, on the other hand, should be turned into a series. Yes, it's been adapted twice, but both were lacking, and that premise could support multiple seasons.
