I’m doing it this way right now. Internal temp at 78 now.
Used his turkey method at Thanksgiving and that is now my go-to. Had Rosemary salt left over in the fridge, so made sense since he uses it for prime rib.

We did this last week. Smoked to about 120-ish, quickly seared the edges, and let it rest in a cooler for about an hour

Keep the bones. I like the cook it at 500 then turn it way down method.
