Posted above. 👆🏻 I use a 72 hr cold ferment and also a 24 hr room temp ferment
Both work really well but I kind of lean toward the 72 hr cold ferment because it gives just a little more of a flavor profile.

I follow his recipe to a T, the only challenging part is on the 24 hr ferment it more difficult to maintain out house temp below 75 degrees here in AZ.
