When spreading the gospel of pie, it's better to get people started, than have them get turned away at the pastry crust hurdle.
I love a good homemade pastry crust, as they are flaky, buttery, deliciousness, and can really make a pie better. But, honestly, pie is 80% plus about the filling. If you want a shortcut, the crust is it.
