I have been doing this for over 10 years
My immediate family prefers this to smoked turkey.
It's not slow, but my turkey is always tender and juicy.
The recipe talks about fancy pans and such. I just use the old classic roasting pan

Yes, forget the 165 degree recommendation for poultry. 155 is plenty for turkey.
